View Full Version : Peggy's Tortilla Soup

Ingredients:
4 tbl. butter
1/3 cup oil
1 lg. onion, chopped
1 fresh jalapeno, chopped + seeded
4 cloves garlic, minced
2 lg. carrots, diced
6 ribs celery, diced
1 lb. raw chicken, boned + sliced
1 tsp. cumin
1 tsp. salt
1 tsp. chili powder
1 tsp. lemon pepper
14 oz. tomatoes + green chilies, canned
42 oz. chicken broth
2 tbl. lime juice
6 stems cilantro leaves, chopped
sour cream
jack cheese



Heat oil and butter in large pot.
Saute onion, jalapeno, garlic, carrots, and celery, and chicken. Simmer until water is reduced and vegetables begin to brown.
Add cumin, chili powder, salt, and lemon pepper, then stir.
Add tomatoes and chicken broth, then simmer for one hour.
Add cilantro and lime juice.
Put sour cream and cheese in bowls, then add soup.


This is Michael's mama's soup. It's insanely good. If you want to make the regular-carb version, add tortilla chips to the bowls before you add the sour cream and cheese.

I put the recipe into SparkRecipes calculated on 8 1-cup servings. The macros do not include the sour cream, cheese, or the tortillas, so be sure to add them if you use them.

I am telling y'all, it smells SOOOO good.

Disregard the directions on sauteing the onions and all for five minutes... do it until they dry out and brown a little. Those little bits make it taste amazing.

Question about the tomatoes...are they necessary? Do you use Rotel or a different brand? I tried rotel a couple weeks ago and it was too tomato-y for me. Does the tomato taste mellow in the cooking?

We use off-brand Rotel, but it's the same thing. And the taste REALLY mellows out. I would say that they are probably necessary, but they don't dominate the flavor at all.

The soup isn't spicy in the end either, despite the jalapeno, cayenne pepper, and Rotel. It is hearty, though. Sam thinks it is more of a stew than a soup.

I'm gonna try it when I'm off protein days. I only asked because I ended up throwing out what I made with the rotel. I'll see what brands I can find next time I shop.

Carey, try Italian diced tomatoes... I made cheeseburger soup this weekend & didn't have but 1 can of rotel (I'm not a huge fan of Rotel), and I really thought the flavor was much better this time than the last time I made it.

Heather, that is true, but this is also a Mexican soup, so a few hot somethings are usually a prerequisite. And seriously, it is not spicy. It is so not spicy that if you didn't know there were peppers in it, you wouldn't really think that anyone had put them in. A spicy chicken sandwich from Wendy's has twice the spice, and Wendy's food is as white as it gets.

Summary: y'all be pusses in the first degree. :rolleyes: :LOL:

I don't mind the peppers either. I don't know what it is about the rotel that I'm not a fan of. I think it was the sausage dip that my friend made one time & I got sick from that turned me off to rotel. I use it in soups & such.
I love me some peppers... :D I actually miss that spicy chicken from Wendy's & Bojangles.

All I can say is Oh. My. Freakin'. Good.!!!!

I used Kroger brand diced tomatoes with green chiles, and I used I Can't Believe It's Not Butter and a very small amount of oil, maybe a tablespoon.

I actually would add more broth next time so it goes further. Ahh heck...I'm just gonna make it by the vat from now on. :lmao:

I forgot to put the sour cream in it, but I did use the jack cheese. The cheese is good, but I think I liked it even better without. It'll be interesting to see the difference the sour cream makes tomorrow. I'm sure it will be good either way!

:D It was good, but I think I put in a little too much salt this time. :o

Groceries are so expensive up north. It's crazy! I went to the ghetto sad grocery store, and butter was $5. :eek:
