French Onion Soup

2 Tbls. butter (0 carbs)
4 sm/med sliced onions (4 small - 19 net carbs)
3 cups beef broth (low sodium okay) (1.37 carbs)
1 1/2 cups water
1 Tbls. Worcestershire sauce (2.84 carbs)
1/4 tsp. black pepper (<1 carb)
1 dash ground thyme (could use dried) (<1 carb)
1 slice provolone OR mozzarella cheese (1 carb/ea.)


-Melt butter in saucepan over low heat
-Add onions and cook 20 minutes, stirring occasionally
-Add beef broth, water, Worcestershire sauce, pepper, and thyme to pot
-Increase heat and bring to boil, then reduce heat
-Cover and simmer for 5 minutes
-Divide into bowls
-Top with cheese
-Broil until cheese is melted
