This is a very refreshing dip or side dish. We love it as an accompaniment to our Middle Eastern dishes.

Ingredients:

1 cup Greek Yogurt or plain yogurt strained.
½ large hothouse or English cucumber
Pinch of salt
Freshly ground black pepper
1tbs. Extra Virgin Olive Oil
1 tsp. white wine vinegar
2 ounces (tbs.) freshly squeezed lemon jucie
2 Garlic Cloves, pressed or squashed and finely minced/
2 tsp. chopped fresh mint leaves (some like to use dill but I don't like it.)


Directions

If you don't have Greek yogurt, strain plain yogurt by placing it in a strainer lined with coffee filter paper, set it over a bowl, and refrigerate it for at least one hour up to overnight, so the liquid drains out.

Peel and grate the cucumber flesh – do this on four of its sides, discarding the central seeds. Taking up handfuls of the shredded cucumber, squeeze out as much moisture as you can

Put yogurt in a large bowl and mix in all the other ingredients. This can be served immediately; however, it is traditionally served after having chilled well and allowing a few hours for the flavors to blend.
