    Default White Chicken Chili


    White Chicken Chili

    1 pound of chicken breast, cooked

    1 Tbs. olive oil
    1 chopped onion
    1 clove garlic
    1 14 ounce can of chicken broth
    1 or 2 cans of chopped green chilies
    1 15 ounce can of white beans, Great Northern, drained and rinsed
    1/2 tsp. salt
    1 tsp. cumin (you can add more if you like)
    1/4 tsp. cayenne pepper
    1 cup sour cream (you can use regular or non-fat)
    1/2 cup cream

    In a 2 quart sauce pan add oil and cook onion and garlic. Add chicken and sautee lightly. Add broth, chilies, drained beans, and seasonings. Cook for about 30 minutes until flavors blend. Just before serving, remove pan from heat and stir in sour cream and cream and stir gently.

    This will make 4 good sized servings. You can serve in bowls and sprinkle shredded Cheddar and/or crushed tortilla chips on the top of each bowl.
