    Default Noodleless Lasagna

    Well, not really lasagna so much but this is what we call it....measurements are just guesses since I usually use up whatever amount is on hand...

    about 1.5 lb. cooked ground beef
    spaghetti sauce....whatever kind is allowable on your plan
    1 container of whole milk ricotta cheese
    2 eggs
    2 c. shredded mozzarella cheese
    1/4 c. shredded parmesan

    Mix ground beef with sauce (only enough sauce to coat the beef or it gets too saucy) and spread in a baking dish....size will depend on how much beef and sauce you have...I usually use either an 8x8 or 7x11 baking dish.

    Mix cheeses and eggs well and spread on top of beef mixture....bake at 350 for about a half hour or so....

    You could probably add onions, mushrooms and other veggies into the beef mixture if you like....

    You can also used thinly sliced zucchini in place of lasagna noodles.
